Blu di Bagnoli

Blu di Bagnoli is a a truly special pasteurized goat's milk blue cheese inspired by the Lombard tradition of Gorgonzola, however produced in a smaller 4/5 kg format.to highlight the  savory and "spicy" notes, accentuated by the distinctive taste of goat's milk. After an initial maturation period of approximately 40 days, the cheese experiences a thorough refinement process. Its rind is  brushed to allow the infusion of Port wine deep into the cheese's paste. Then, it is  coated with a delightful mixture of dried cherries and elderberry, leading to a second phase of "conciata" seasoning. This step ensures the perfect adherence of the new rind, resulting in a cheese that beautifully combines tradition and innovation, offering an exceptional flavor experience.
