We were born to follow up our passion for traditional and quality cheese, charcuterie, hunting them wherever in Italy.
Cheese made from raw milk often has a more intense taste, and it retains the qualities of the milk from which it came, including what the animal ate, so that’s why we opt for this kind of cheese whenever we can, but we are not fundamentalists of any kind, so if we find a good cheese and it’s pasteurized, we’re also very happy to enjoy it.
That said, raw milk cheeses are our passion.
