Conciato di San Vittore

Description

Conciato di San Vittore is a cheese deeply rooted in the Campania/Lazio region, historically known as the Terra di Lavoro, the oldest province of the Kingdom of Two Sicilies. With a heritage which goes back over 2,000 years, this cheese has been an integral part of local culture. Almost lost and saved  in the 1990s, Conciato di San Vittore is a testament to century-old traditions. Its skin is covered with a secret blend of 12 wild herbs coming from the  Abruzzo National Park. While the exact recipe remains a closely guarded family secret, it features ingredients like Wild Thyme, Junipers, Wild Fennel Seeds, Coriander Seeds, Basil, and Sage.


Tasting notes

Sweet and balanced acidity, savoury with a mild herbs taste (coriander, thyme, wild fennel, sage, rosemary, ,...). Each bite can give you a different aroma biting a different herb.
