Morla

Inspired by the French tradition of Brie de Coloummiers, Morla is a soft goat cheese with a bloomy rind.

It retains all the characteristics of artisanal processing: slow acidification, cutting of the curd 'in sheets' with a plate, small production runs to avoid altering the taste during curd extraction (max 1h). 

Tasting notes

Incredible cheese!! Very complex variatioin  on the brie  style. The more the cheese mature, the more the scents of mushrooms became intense, from truffles, cauliflower (4/5 weeks) to ammoniacal hints (6/8 weeks).
