Romano is breeding 300 Calabrian Black Pigs which roam freely and peacefully in the wild, 1,100m above sea level in a 16-hectare wood that is fenced in organic farming, integrating a minimum diet with organic grains produced on the farm. Romano Nduja di Maiale Nero di Calabria is different from the others:
-The percentage of meat is 40% (15% other producers); The fat used is high-quality, competitors use the liquid lard fat to reduce costs, the grind is coarser just to highlight the quality of the meat and fat used.
The spiciness is not extreme as the competitors do to hide the low quality of the raw materials; No preservatives are added.
