Pecorino di Fossa

Pecorino aged in fossa

Pecorino di Fossa is a classic sheep's cheese that traces its roots all the way back to the Middle Ages. Its name, "Fossa," literally means "pit" in Italian because it ages in an underground sandstone hole. 

This special cheese matures for four months in this pit, away from the air. Legend has it that the tradition began by accident when farmers hid their valuables in caves to protect them from pirates back in the 12th century. 

It can be stored for a year or even two without changing much in taste, smell, or texture. 

Our Pecorino di Fossa offers a unique flavor compared to the stronger and spicier versions you often find in the market. It's a cheese with a fascinating history and a flavor that sets it apart.

The complexitiy of our Pecorino di fossa is great, intense, deep, complex a kind of smooth texture almost buttery, very long after taste but never spicy.
